Baja Fresh set to open in Union

A little taste of Mexico is coming to the Indiana Memorial Union.

Baja Fresh is set to open the first week of October in the IMU.

The Mexican Grill food chain is based out of Los Angeles and is slowly moving across the country.

Holly Parient, director of retail operations at the IMU  said there is nothing with that “flavor profile” on campus, which is one of the reasons they decided to open a Baja Fresh. Another reason is the chain’s reputation of freshness.

“It’s the freshest corner on the market,” said Bruce Jacobs, executive director at the IMU. “They don’t have frozen or canned foods, and that is one reason why we were
so interested.”

The restaurant’s menu offers a variety of vegetarian options, along with traditional dishes with chicken, pork and beef. It will also have different kinds of salads, soups and burritos.

“I think it’ll be very competitive with the restaurants on Kirkwood,” Parient said.

The IMU takes care of many students’ appetites a day, and the opening of Baja Fresh will add to that contribution.

“We want to provide a place where students or staff can come and get a fresh meal during their break in the day and then head back to class,”
Jacobs said.
