Hummus

Hummus Dip

Ingredients

  • 1 16-ounce can of chickpeas
  • 1/4 cup of chickpea juice from can
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, crushed
  • 3 tablespoons of lemon juice
Steps
  • Purée chickpeas in a blender.
  • Add in the olive oil, garlic, and lemon juice.
  • Add your choice of seasonings if you’re feeling creative.
  • Enjoy with veggie sticks or pita bread.
Minty Green Guacamole

Ingredients
  • 1 pound of sweet peas, cooked until skin is tender, and shocked in cold water (frozen peas may be used in a pinch)
  • 1 jalapeño, roughly chopped
  • 2 garlic cloves
  • 1 tablespoon of ginger, minced
  • 1/2 bunch of mint leaves
  • 10 basil leaves
  • 5 sprigs of cilantro
  • 1/2 package of silken tofu
  • 1/4 cup of olive oil
  • Salt and pepper to taste
  • Favorite hot sauce as needed
Steps
  • Purée all ingredients, except the seasonings, together in a blender or food processor until smooth.
  • Season to taste with salt, pepper, and hot sauce.
  • Serve as a dip or sandwich spread.
